Creamy Maple Worker’s Pudding (Le Pouding Chômeur)
Ingredients:
Creamy Maple Sauce
- 1 cup maple syrup
- 1 cup whipped cream
- 1/4 cup soft butter
OR
Brown Sugar Sauce
- 1 cup brown sugar
- 1 cup hot water
- 1/4 cup soft butter
- 1 tsp vanilla
Pudding
- 1 1/2 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup soft butter
- 1 cup maple sugar or white sugar
- 1/4 cup milk
- 1 egg
- 1 tsp vanilla
Instructions:
Preheat oven to 350°F (180°C). Butter an 8-inch square pan. Combine sauce ingredients in a saucepan, boil for 2 minutes, set aside, and keep warm. Mix flour, baking powder, and salt. Cream butter and sugar, then add milk, egg, and vanilla alternately with flour mixture. Pour batter into pan, spoon warm sauce over, and bake for 45 minutes until golden. Serve hot or cool. Enjoy with ice cream!
Hodge Podge
Ingredients:
- 2 lbs potatoes, quartered
- 2 cups carrots, quartered
- 1 1/2 cups green beans, 2-inch pieces
- 1 1/2 cups yellow beans, 2-inch pieces
- 1/2 cup peas
- 1/2 cup butter
- 1/4-1/3 cup whipping cream
- Salt and pepper to taste
- Optional: 4 chopped bacon slices, 1 tbsp maple syrup
Instructions:
Add potatoes and carrots to a lidded pot, cover with water, boil, then reduce heat. Cook until tender, add beans and peas, cook 2-4 minutes until bright. Add bacon and butter, stir until melted. Stir in maple syrup (optional) and cream gradually until coated. Season to taste. Enjoy!
